About the Meat Judging Team

We are a very active and competitive group of undergraduate students learning important skills in the meat science industry. As a team we compete on the national level and support our competitive schedule with our catering services.



We are student-run and operated catering service. All proceeds go to the CSU Intercollegiate Meat Judging Team to fund our training, competitions, and travel expenses. Our aim is to ensure all our team members get to compete regardless of their financial situation.

We pride ourselves in accommodating all requests with the standards and integrity of Colorado State University. Our aim is to enhance your special event with quality food and quality service.
We have the capacity to serve events planned for 30 to 800+ people. Choose from a variety of menu options ranging from casual finger foods to formal dining occasions.

What We Do as a Team

We train as a team in the following disciplines using USDA quality and yield standards:

  • evaluate and rank beef carcasses
  • evaluate pork and lamb carcasses and cuts,
  • mastering cut specifications for all species

What We Gain for a Lifetime

Our team travels to over seven contests per year and line up against other large universities at national livestock shows. By being team members, we get a deeper understanding of the meat science industry, develop our critical thinking and decision skills, plus great exposure to leaders in the industry. We become lifelong friends and colleagues and draw on our experiences throughout our careers.
