Biography
Dr. Mahesh N. Nair is an Associate Professor of Meat Science in the Department of Animal Sciences at Colorado State University. He received his B.S. in veterinary medicine (DVM) from Kerala Agricultural University, India (2009) and M.S. (2012) and Ph.D. (2017) from the Department of Animal and Food Sciences at the University of Kentucky. Mahesh has built a highly productive research program supported by over $5 million in funding from federal, commodity, and industry groups. His research focuses on fundamental and applied factors that influence fresh meat quality, specifically postmortem biochemistry meat color, shelf-life, tenderness, and eating quality. He has published over 80 peer-reviewed journal articles, 5 book chapters, and 95 conference abstracts. In addition, he has mentored several graduate students as an advisor or committee member. Mahesh’s lab has also hosts several visiting scientists from prominent institutions around the world, including the USA, Brazil, India, and Germany. He is a reviewer for more than 40 scientific journals, including the Journal of Animal Science, Meat Science, Meat and Muscle Biology, and Food Chemistry. Mahesh has been recognized by the American Society of Animal Science and the American Meat Science Association for his teaching and research excellence.
